No one serves the dining public quite like Joshua Ramirez. We bet even if he worked out of a roach coach, he'd still be followed around by a legion of hungry fans who'd rather eat their tacos off the ground than miss out on the friendly smile of the now three-peat winner of this category (two years with Sushi Zushi, one year with Alamo Drafthouse Park North). Whether he's serving up the Tuna Poki appetizer or the signature Toreado roll, Ramirez knows his raw fish and crustaceans. Want to find out if the freshwater unagi eel is fresh or how salmon caviar differs from masago? Ramirez is like a marine biologist with a license to serve sake. Just remember to tip him well. It can't be easy taking an order for a Yummy Yummy roll (yes, it's on the menu) and having the customer ask if it's really (doh!) yummy.
