Uncompromising gutsy drinks at Sustenio

It's something of a schlepp and may require an attitude adjustment, but should you find yourself anywhere near the Tuscan-themed pile on I-10 West that is Éilan Resort & Spa, the bar at the flagship restaurant Sustenio, is well worth your attention. Not only is it visually classy, but the drinks list delivers. Specialty cocktails are normally in the $10-$14 range, but at Happy Hour (daily 4-7 p.m.) both drinks and house wines are half off. The Winchester with Tanqueray, lime, simple syrup, cilantro, and muddled jalapeño is full-bore and fine; the Mole Old Fashioned, featuring Xocolatl mole bitters along with Knob Creek and orange, is mellower but still uncompromisingly gutsy. Also looking good is the Rye Sunset with blood orange liqueur and more and the Passion Chile Margarita. A list of special apps includes flatbreads from the oven adjacent to the ceviche bar.
