If you've ever made a bet with your vegetarian friends that you can go meatless for 30 days (as I did recently), you've got to have a game plan. I am told the surest way to fall off the wagon is to feel like you're depriving yourself. Luckily, my favorite Thai dishes from Mon Thai also come in veggie-friendly packages, and you can't go wrong ordering pad thai with fried tofu. In fact, this version is far superior to the meaty one: the salty/spicy/sweet noodles are as decadent as ever, but the springy tofu keeps the massive noodle dish from getting too heavy. Order in and veg out.
