1. Freetail Brewing Co.
4035 N Loop 1604 W, Ste 105, (210) 395-4974, freetailbrewing.com
As a brewpub, Freetail is able to do things many fast-growing microbreweries wish they could, that is: go a little nuts on the beer a few barrels at a time. Although hardcore craft beer lovers tend to want consistency from a manufacturing brewery, the endless innovation (and a darn good pizza) are what draw folks back to Freetail weekly. Want a Belgian-style sour beer, a smoked chile brew, a massive imperial stout, or one of the classics like porter, wit, blonde, or IPA? Freetail has you covered. Concoctions pour from the mind of brewer Jason Davis like a lyric from George Clinton. No matter how funky it gets, it's nearly always good. The brewery can't sell beer except at the pub, but the addition of a bottling line this year makes it easier to carry a few home for further experimentation.
