But the oven, "Il Cuore" (The Heart), a wood-burning marvel imported from Italy, is as important as the ingredients — it cooks pizzas at more than 800 degrees in less 90 seconds. Out of the eight styles served at Dough, first try the simplest: the Margherita "STG," with buffalo mozzarella, parmigiano reggiano (a hard parmesan cheese), and basil.
