We love food trucks. But, honestly, there are days when the restaurant-on-wheels trend feels completely out of hand. Frequently operators wheeling out new mobile eateries breathlessly pitch us stories as if they have something new to offer when, in fact, it's the same basic grub. Proponents are even framing the case for more trucks by suggesting these "culinary islands" can make up for the lack of grocery store options downtown. And maybe there's something to that. But with Say.She.Ate in Southtown there's no need to even question. They softened us up with their clever wordplay, but thankfully they also walk the walk, elevating the concept all the way to their shining offerings: Akaushi beef sliders prepared with American Kobe (above); chicken and waffles (with a twist … wait for it); Belgian-style fries flecked with Herbes de Provence — and cooked in rendered duck fat. That's not a typo: Duck. Fat. Oh mama! Or should we say: Umami?!
